Carboxylic acids are organic compounds with the carboxyl functional group (—COOH), general formula CₙH₂ₙ₊₁COOH. The first members are methanoic acid (HCOOH, found in ant stings) and ethanoic acid (CH₃COOH). Vinegar is a dilute (about 5%) solution of ethanoic acid in water.
Carboxylic acids are named by replacing -e of the alkane with -oic acid: methane → methanoic acid, ethane → ethanoic acid. They are weak acids — they ionise only partly in water: CH₃COOH ⇌ CH₃COO⁻ + H⁺.
The main laboratory route is oxidation of a primary alcohol: ethanol oxidised with acidified potassium dichromate gives ethanoic acid (via ethanal). In everyday life, the same oxidation happens slowly when wine or beer is left open — bacteria oxidise ethanol to ethanoic acid, turning it to vinegar.
Other routes: hydrolysis of esters gives an acid + alcohol; oxidation of aldehydes gives acids; and methanoic acid is made industrially from carbon monoxide and methanol. The key idea is that the —COOH carbon is already highly oxidised.
The —COOH group forms strong hydrogen bonds, so small carboxylic acids mix completely with water and have high boiling points (ethanoic acid boils at 118 °C). Pure ethanoic acid is called glacial acetic acid because it freezes just below room temperature (17 °C) into ice-like crystals.
As the chain grows, solubility falls — long-chain fatty acids (like stearic acid, C₁₇H₃₅COOH) are insoluble in water. Carboxylic acids have a sour taste and a sharp smell, and they turn blue litmus red.
Carboxylic acids behave as typical acids, but weaker: with metals: 2CH₃COOH + Mg → (CH₃COO)₂Mg + H₂. With bases: CH₃COOH + NaOH → CH₃COONa + H₂O. With carbonates: 2CH₃COOH + Na₂CO₃ → 2CH₃COONa + CO₂ + H₂O — the fizzing with carbonate is a test for acids.
Esterification: acid + alcohol ⇌ ester + water (concentrated H₂SO₄ catalyst, reversible). Ethanoic acid + ethanol gives ethyl ethanoate, a fruity-smelling solvent used in nail polish remover and flavourings.
Vinegar (dilute ethanoic acid) flavours food and preserves pickles, because acids slow bacterial growth. Soaps are made by saponification: a fat/oil (an ester of glycerol and fatty acids) boiled with sodium hydroxide gives soap (sodium salts of fatty acids) + glycerol. Soap cleans because one end of its molecule loves water and the other loves grease.
Carboxylic acids are also used in medicines (aspirin is made from a carboxylic acid derivative), in dyes, and in making polymers such as polyesters. Citric acid (in lemons) and lactic acid (in sour milk) are everyday carboxylic acids.
Esters as flavourings: Many esters smell fruity — ethyl butanoate smells of pineapple, amyl acetate of banana — so they flavour sweets, drinks and essences (exercise B 24.5, D 24.3). Carboxylic acids flavour too: citric acid (lemons), malic acid (apples), tartaric acid (grapes) and acetic acid (vinegar) give tartness and act as flavour enhancers (B 24.6).
Acids as solvents and preservatives: Ethanoic acid dissolves many polar and organic substances, so it is used as a solvent in dyes, varnishes and pharmaceuticals (exercise C 24.3). Its acidity makes vinegar a preservative: the low pH of pickles inhibits bacteria and fungi (B 24.7). In beverages, acids give tart flavour, preserve the drink and balance sweetness (B 24.4).
